You’ll need: 6 large eggs (hard-boiled), 3 Tbsp mayonnaise, 1 tsp Dijon mustard, 1 tsp apple cider vinegar, salt and black pepper to taste, paprika (for garnish). To make: Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 10–12 minutes.
Immediately transfer eggs to an ice water bath for 5 minutes to stop cooking and make them easier to peel. Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl.
Mash the yolks with a fork (or blend for extra smoothness) and mix in the mayonnaise, mustard, vinegar, salt, and pepper until creamy. Pipe the mixture back into the egg whites. Garnish with paprika.
